Deer Roast - Mississippi Style

1 large deer roast

Jalapeno peppers

Several toes of garlic

2 packages commercial meat marinade

2 pounds fresh deer sausage

Salt and pepper to taste

Make several slits all over roast. Insert pieces of jalapeno peppers and garlic into slits. Make mixture of meat marinade as directed on package and pour over roast in container suitable for marinating (no metal). Refrigerate for one day, turning occasionally. When ready to cook, place in 2 thicknesses of heavy duty aluminum foil, pouring all marinade over the roast and place in roasting pan. Put fresh sausage directly on top of roast. Do not cut up sausage. Wrap foil tightly around rost and place in preheated 400 degree oven about 4 hours. Do not open until done. When opened, it should be very tender and falling off bone.

Venison Stew

Salt, pepper, season blend to your taste

2 pounds deer meat, cut into pieces

3/4 cup oil

3/4 cup flour

1 onion, chopped

3/4 cup chopped green peppers

Garlic, chopped

1/4 cup parsley

1/2 bell pepper, chopped

2 tablespoons tomato paste

1 large can mushrooms

Season meat to taste, cover and refrigerate for about 1-2 hours. Make a brown roux with oil and flour. Add seasoning and tomato paste. Saute a few minutes, Add meat, and mushrooms. Smother a few minutes. Add water and bring to boil. Lower fire and cover partially. Cook until tender. Adding water as necessary. Season to taste. Serve over steaming rice.

Deer Tamale Casserole

1 dozen deer hot tamales (beef can be substituted)

1 can enchilada sauce

1 cup shredded cheddar cheese

Optional:

Salsa

Sour cream

Shredded lettuce

Sliced jalapeno

Shredded cheese

Unwrap tamales and place in shallow baking pan. Spoon enchilada sauce over tamales evenly. Sprinkle cheese over tamales and bake in a preheated oven of 350 degrees for 20-30 minutes or until tamales are heated and cheese bubbly.

Remove from oven and add any of the options to fit your family or friends. Serve hot.

Hunters Breakfast Wraps

Flour tortilla wrappers

Spicy patty sausage

3 eggs

1/2 cup shredded cheese

Onions, chopped (optional)

Heat oven to 350 degrees. Cook spicy patty sausage until done. Crumble and place on side. Scramble eggs and cook in pan used to cook sausage. Add onions. Heat tortilla wrappers in microwave, 5 seconds each. Spoon sausage and eggs into wrapper, add cheese and roll. Once all made, place on baking sheet and heat in oven for approximately 10 minutes, Serve with warm salsa.
